The State of the Coffee Program

Last year brought us an amazing batch of new partners and new coffees. It feels like every year, more of our coffee comes from traceable lots—meaning that we know exactly which producer it came from, some of whom we even met directly. This is so exciting, and I love sharing coffee with the neighborhood produced by colleagues I know and trust. I hope that even more of the menu next year has this kind of transparency...

What's a Cortado?
For those who don't know, the cortado is an espresso beverage with roots in Spain. Like many espresso drinks, it has a long history with some regional variations in its recipe. However, it is traditionally a 4oz drink, with equal parts espresso and steamed milk (2oz of each). In hundreds of coffee shops across the country, this is what you will get if you order a cortado.
You may be asking why we bring this up. It might have something to do with a certain major coffee chain that just announced a new product called a “Cortado”. Let’s just say they’re playing fast and loose with the definition of a cortado. But who are we to say? They know their audience.. and we know ours. Aficionados love our traditional cortado for its balance of espresso and milk, which adds just enough creamy sweetness to round out the espresso without drowning it out. It’s been a true crowd pleaser at Solid State from the very beginning. Despite what other outfits might be doing with their versions of this venerable drink, we have no intention of changing ours. If you want a faithful representation of this classic, stop in for what we think is the best around.
AI Used to Find Coffee Defects
You can't look anywhere without seeing AI shakeup the way we do things in the world. A paper published in Scientific Reports now suggests that AI can help coffee producers as well. The researchers used the open source YOLO model to develop their own model, which had a high degree of success identifying defects in green coffee. If made available, a tool like this could save hundreds of hours on a task that is often done by hand.
